Introduction to Enchiladas
Enchiladas are a delightful Mexican dish that can be customized in countless ways. Traditionally made with corn tortillas, they are filled with a variety of ingredients such as meats, cheese, and vegetables, then rolled up and topped with a flavorful sauce. In this post, we will explore a simple yet delicious enchiladas recipe that you can easily make at home.
Ingredients You’ll Need
Before we get started, gather the following ingredients for our enchiladas recipe:
- 8 corn tortillas
- 2 cups shredded cooked chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can (10 oz) enchilada sauce
- 1 small onion, diced
- 1 tablespoon olive oil
- Optional toppings: sour cream, cilantro, or avocado
Preparing Your Enchiladas
Begin by preheating your oven to 375°F (190°C). In a skillet, heat the olive oil over medium heat and sauté the diced onion until translucent. Next, add the cooked chicken and half of the enchilada sauce to the skillet, mixing well. Now, take a tortilla and fill it with about 1/4 cup of the chicken mixture. Roll it tightly and place it seam-side down in a baking dish. Repeat with the remaining tortillas. Once all are rolled, pour the remaining sauce over the top and sprinkle with shredded cheese. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly. Serve hot, garnished with your favorite toppings.
